Recipe for Village Rice
Village rice is a Nigerian styled dish known for it's smokey, traditional flavor and simple, rustic preparation.

Ingredients
- 3 cups of rice
- 4 cups of water
- 1 teaspoon of salt
- 2 cubes of Knorr Maggi
- 1 tablespoon of ground crayfish
- 1 teaspoon of curry masala
- 2 onions, chopped
- 1/2 cup of palm oil
- Smoked Panla fish or meat for added flavor
- Cow skin
- 1/2 cup of locust beans (iru)
- 1/2 cup of dry prawn
- 1/2 cup of grounded pepper(Scotch bonnet pepper & Chili Pepper)
- 1/2 cup of sliced green vegetables (ugu)
Instructions
- Rinse the rice thoroughly in cold water until the water runs clear.
- In a large pot, add palm oil and heat it over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Add locust beans, crayfish,dry prawn and grounded pepper to the pot and stir well.
- Add curry masala, salt, and Knorr Maggi cubes. Stir to combine.
- Let it simmer on medium heat for 4minutes
- Add the rinsed rice to the pot and stir to coat the rice with the mixture.
- fry it for about 2minutes
- Add the water and bring it to a boil.
- Once it starts boiling, reduce the heat to low, cover the pot, and let it cook for about 20-25 minutes or until the rice is tender and the water is absorbed.
- Once the rice is cooked, add the smoked fish or meat, and sliced green vegetables (ugu) to the pot.
- Stir gently to combine and let it cook for an additional 5 minutes.
- Remove from heat and let it sit covered for a few minutes before serving.
- Serve hot and enjoy your delicious Village Rice!
Tips
- For a smokier flavor, you can cook the rice over an open flame or use a charcoal stove.
- Feel free to adjust the spice levels according to your taste.
- Add some of the smoked fish/beef while preparing the sauce then add the rest while putting in your vegetables.
- Ensure to check the rice occasionally to prevent burning.
- Pair with a side of fried plantains or a fresh salad for a complete meal.
