Recipe for Village Rice

Village rice is a Nigerian styled dish known for it's smokey, traditional flavor and simple, rustic preparation.

  1. Rinse the rice thoroughly in cold water until the water runs clear.
  2. In a large pot, add palm oil and heat it over medium heat.
  3. Add the chopped onions and sauté until they are translucent.
  4. Add locust beans, crayfish,dry prawn and grounded pepper to the pot and stir well.
  5. Add curry masala, salt, and Knorr Maggi cubes. Stir to combine.
  6. Let it simmer on medium heat for 4minutes
  7. Add the rinsed rice to the pot and stir to coat the rice with the mixture.
  8. fry it for about 2minutes
  9. Add the water and bring it to a boil.
  10. Once it starts boiling, reduce the heat to low, cover the pot, and let it cook for about 20-25 minutes or until the rice is tender and the water is absorbed.
  11. Once the rice is cooked, add the smoked fish or meat, and sliced green vegetables (ugu) to the pot.
  12. Stir gently to combine and let it cook for an additional 5 minutes.
  13. Remove from heat and let it sit covered for a few minutes before serving.
  14. Serve hot and enjoy your delicious Village Rice!
